This dish is really cheesy, contains a lot of protein, can be made gluten-free, and is the simplest way to use up any vegetables that have been left over.
Ingredients for Pasta Bake

Jarred pasta sauce | 2 cups |
Egg | 1 |
Low fat cottage cheese | 1 cup |
Light cheese – mozzarella, Parmesan, cheddar | 1 cup |
Italian seasoning | 1 tsp |
Preparation for Pasta Bake
- Preheat oven to 180 degrees. Drain the pasta after cooking it for a few minutes less than what is recommended on the package.
- In a skillet with heated olive oil, brown the onion, garlic, and ground beef until the onion is translucent. After adding the pasta sauce, let it simmer for ten minutes. Cover the bottom of a baking dish with some sauce and set it aside.
- In a bowl, combine the cottage cheese, egg, and half of the cheese along with the Italian seasoning, salt, and pepper. Add the cheese mixture and the pasta that has been cooked to the sauce. Place in a baking dish and top with the remaining grated cheese.
- Cover with foil and bake for 30 minutes before removing it and continuing to bake for an additional 5 minutes, or until the cheese is brown. It serves four.
