A creamy sauce made with avocados, spinach, basil, and nuts is used in the pasta dish known as Creamy Avocado and Spinach Pasta. A wonderful pasta meal that is also very good for you; you can eat it without feeling guilty.
Ingredients for Creamy Avocado and Spinach Pasta
|Spaghetti (dry, or fettuccine, I used semolina pasta)||10 ounce|
|Spinach (fresh)||1 cup|
|Parmesan cheese (grated)||1/4 cup|
|Lemon juice (freshly squeezed)||1 tablespoon|
|Pasta water||3/4 to 1 cup|
|Salt (or to taste)||1/2 teaspoon|
|Pepper (or to taste)||1/2 teaspoon|
Preparation for Creamy Avocado and Spinach Pasta
- Prepare the pasta by cooking it in accordance with the directions provided on the package.
- To prepare the avocado sauce, place the other ingredients in a blender and process until a smooth sauce is formed. Begin with three quarters of a cup and a half of the pasta water, then add more as necessary to achieve the desired consistency.
- Assemble: To serve, toss the pasta in the bowl with the sauce, and then do so as soon as possible. Because of the inclusion of avocados, which can acquire a brownish color after being exposed to air, this sauce is best when served on the same day that it was produced.
