Eat it for breakfast with a fried egg on top, or have it as a snack in the afternoon. You may prepare these in advance, store them in the refrigerator, and then reheat them in the toaster oven on the medium setting.

Preparation for Sweet Potato Toast
- Cut the sweet potato into slices, then cook it using the manner of your choice (toaster, oven or stovetop)
- My go-to method is the toaster, so I put the bread slices in the toaster and give them about 4-5 rounds of toasting. When they are nicely toasted and completely cooked through, I remove them from the toaster and top them with mashed avocado, crumbled feta cheese, crushed red pepper flakes, and honey drizzle.
- You may add scrambled eggs or a fried egg directly on top and enjoy! This dish is wonderful and filling on its own, but you can also mix it with scrambled eggs or add a fried egg to it.
- And before you ask, I do indeed brown these sweet potato slices in the toaster before topping them with avocado, feta, crushed red pepper, and honey drizzle.

I cannot get enough of sweet potato toast.. They are naturally devoid of gluten, have a high fiber content, and are loaded with a plethora of nutrients… something that cannot be said for the vast majority of slices of bread.
It gets a perfect score from me. Additionally, you all can give the recipe a shot.
