Preparation for Broccoli Spinach Soup
- In a saucepan set over medium-high heat, you should melt the butter. Sauté the garlic for one minute, being careful that it doesn’t turn brown. Add the garlic.
- Sauté the onion until it is tender and transparent after adding it to the pan.
- After that, add the florets of broccoli and cook for another two minutes. Add vegetable broth (or water). Combine thoroughly.
- Cover and continue cooking for approximately three to four minutes, or until the broccoli florets are tender when pierced with a fork.
- After that, stir in the spinach, milk, cheese, some freshly ground black pepper, and salt. Stir thoroughly.
- Simmer the spinach for one to two minutes, or until it has wilted. At this point, you should take the pot away from the fire and switch off the gas.

- If you believe that the soup is not thick enough, you can thicken it by boiling cornflour slurry for two minutes and adding it to the soup. This results in a consistency that is thick and creamy. Since I prefer a watery consistency, I omitted the addition.
- Have fun eating your soup while it’s still hot!
