Preparation for Chicken Pot Pie Soup
- In a large Dutch oven or stockpot, melt one tablespoon of butter over medium-high heat. To taste, salt and pepper should be applied to the chicken. After browning the chicken in the stockpot for about two to three minutes, remove it and set it aside.
- Turn down the heat to medium and melt the remaining butter (four tablespoons). Put in some chopped onion, carrots, and celery. Cook for about 3 to 4 minutes, stirring once or twice, until the vegetables are soft. After approximately a minute of stirring, add the garlic and poultry spice and let it cook until the aroma is released.
- After about one minute of whisking, the flour should have a light golden color.
- While doing so, scrape any browned bits from the bottom of the stockpot and stir in the wine.
- Add the chicken stock and the bay leaf, and stir well. Bring to a boil, then reduce the heat and simmer for approximately 10 to 12 minutes, or until the flavors have melded together.
- After stirring in the green beans, adding the heavy cream, and the chicken, continue to simmer the mixture for about three to four minutes, or until the green beans are cooked and the soup has thickened.
- After stirring in the parsley and vinegar, season the mixture to taste with salt and pepper.
- If you choose, you can serve these with flaky Mile High biscuits.
