Ingredients for Teriyaki tofu with charred spring onions

IngredientsQuantity
wholegrain rice150g
soy sauce50ml
mirin2 tbsp
grated ginger½ tsp
honey 1 tsp
firm tofu 350g
spring onions, ends trimmed 1 bunch
sunflower oil2 tsp
sesame seeds½ tsp
red chilli, sliced (optional)1

Preparation for Teriyaki tofu with charred spring onions

  1. Prepare the rice as per the instructions on the packaging. In a small saucepan, mix soy sauce, mirin, ginger, and honey with 50ml water.
  2. Bring the mixture to a simmer and cook for around 5 minutes or until it thickens slightly. Once done, take the pan off the heat and keep it aside until required.
  3. If the tofu is not firm enough, you will need to press it. To do this, wrap the tofu block in a few layers of kitchen paper and put a heavy pan or tray on top of it for 10-15 minutes.
  4. The longer you press it, the firmer it will become. Cut the tofu into thick slices. Heat a griddle pan over high heat, brush some oil lightly over the tofu and spring onions, and griddle them until they develop deep char lines on both sides (approximately 4 minutes per side).
  5. Depending on the size of your griddle pan, you may need to do this in batches. Divide the cooked rice equally between two plates, place the tofu and spring onions on top, and drizzle the teriyaki sauce over them.
  6. Add sesame seeds and sliced red chilli as a garnish, if desired.
