Crispy Salmon with Pesto and Vegetables Recipe

The best crispy fish we’ve ever had, covered with pesto and served with delicious parmesan roasted broccoli and cauliflower. You may fry the salmon in an air fryer or cook it on a stovetop. This gluten-free and high-protein dish can be prepared in about thirty minutes and is delicious!

Ingredients for Crispy Salmon with Pesto and Vegetables

Preparation for Crispy Salmon with Pesto and Vegetables

  1. Prepare a baking sheet by lining it with parchment paper and preheating the oven to 425 degrees Fahrenheit.
  2. Combine the cauliflower and broccoli florets in a mixing basin together with 1 tablespoon of olive oil and the minced garlic.
  3. Parmesan should be sprinkled over the top once it has been spread out on the baking sheet that has been lined. Baked for around 25 to 30 minutes, stirring once halfway during the cooking time.
  4. Take them out after they have reached the proper level of crispiness and can easily be pierced with a fork.
  5. In a small bowl, add pesto or salsa verde. If it is too thick, add one teaspoon of boiling water. Continue doing so until you get the required level of consistency.
  6. In the meanwhile, blot the salmon dry with a paper towel, then liberally season both sides of the fish with salt and pepper.
  7. When there are just ten minutes remaining to cook the veggies, put two tablespoons of olive oil in a skillet and heat it over medium-high heat. Once the oil has reached the desired temperature, lay the salmon fillets in the sauté pan with the skin-side facing down.
  8. In order to brown and crisp the skin of the fish, use your spatula to gently push the fish into the pan, and then heat for 90 seconds.
  9. Cook for a further two to three minutes after reducing the heat to medium. Flip the salmon fillets in a careful manner and continue cooking for an additional two to four minutes, or until they reach the desired degree of doneness.
  10. Air Fryer: When there are 15 minutes remaining to cook the veggies, warm your air fryer to 380 degrees Fahrenheit, insert the seasoned salmon fillets skin side down, and air fried for 8 to 10 minutes or until it achieves the desired doneness.
  11. Salmon that has been cooked should be served with vegetables that have been rosted. To finish off your salmon, drizzle it with pesto, then serve with lemon wedges on the side. Enjoy!
